One of the most beloved traditional Iranian dishes, Ābgoosht or Dizi, has various recipes. Stay with us to see the complete step-by-step guide to preparing Ābgoosht.
Recipe for Ābgoosht and Lapeh
Ingredients (for 4 servings):
- Beef for Ābgoosht: 500 grams
- White beans: Half a cup
- Chickpeas: Half a cup
- Tomatoes: 2 pieces
- “Potatoes: 2 medium-sized
- Onion: 2 medium-sized
- Tomato paste: 2 tablespoons
- Salt and black pepper: As needed
- Turmeric: As needed
Step One:
- To prepare the Ābgoosht, soak the chickpeas and white beans separately in water in two bowls overnight. If possible, change the water several times to remove gas from the legumes completely so they cook better.
Step Two:
- Pour oil into a pot and add the beef for Ābgoosht. Sauté the meat well until its color changes. Then drain the chickpeas and white beans and add them to the pot, sautéing them for about a minute as well.
Step Three:
- At this stage, take one of the tomatoes and one of the onions, and add them to the pot. Then add 8 cups of boiling water to the pot. One important point for enhancing the flavor of Ābgoosht is adding boiling water.
Step Four:
- Reduce the heat under the pot and let the Ābgoosht simmer gently. After adding the boiling water, allow the ingredients to simmer for 2 to 2.5 hours over low heat until the Ābgoosht is well cooked.
Step Five:
- After 2.5 hours, wash the potatoes and add them to the pot. After adding the potatoes, remove the fat from the pot along with the remaining onion and crush them well until they are completely mashed. Then add them back to the pot.
Step Six:
- After the meat is fully cooked, sauté the tomato paste in a small pan until it turns red. Then add it to the pot along with salt and black pepper. Sautéing the tomato paste helps to enhance the color of the Ābgoosht.
Tips:
- To enhance the sour taste of Ābgoosht, you can add some lemon juice to a portion of the boiling water. If you don’t want it to become bitter, sprinkle some dried limes and let them steep in boiling water for a few minutes.
- It is recommended to use Delgato dried limes (Limoo Amani) for this purpose.
We hope this Ābgoosht recipe has been helpful to you and provides you with a delicious and enjoyable experience.
